These chiles are the dried form of Anaheim chiles, a variety of the famed New Mexico Hatch chile. Fresh Anaheim chiles are long and bright green with a mild flavor and are ideal for chiles rellenos. When ripened and dried, they are bright red with a sweet bell pepper flavor. Use California Chiles to make red chile sauce for tamales or shredded pork for tacos.
