When taking the temperature of meat, the thermometer should be inserted until the hex-nut on the back of the thermometer is touching the meat, and the stem should also be midway into the meat, avoiding bone and gristle.
The thermometer may need to be placed in the meat on the side if the cut is thinner. When cooking foods that are irregularly shaped, such as a beef roast, be sure to check the temperature in several places.
